Late Harvest

General Wine Term

If a wine producer waits until a bit after the peak harvest season, and peak ripeness, to pick the grapes, the resulting grapes will be more concentrated. These late harvest grapes usually create very sweet wines, but sometimes you will find a dry one that is high in alcohol.
