Bouquet defines the smell of a wine that has been aged. The bouquet of a wine is often a composite of different smells that were part of the wine production, fermentation and aging process and have blended together over time.
Instead of the fruit that dominates the nose of a young wine, a wine that has spent time in a bottle will develop tones from sources beyond the grapes themselves; including floral, oak, or spice. As such, the bouquet of a wine will be much more complex than the smell of a young wine.
A young wine is never described as having a bouquet. Instead, young wines have an aroma. However, with time, the aroma of a young wine can develop into the bouquet of a mature wine.
