An astringent wine is a dry, bitter wine that creates a tight sensation in your mouth, often causing you to pucker.
An overabundance of tannins causes a wine to taste astringent. Young red wines are especially susceptible to being astringent because the high levels of tannins that are there to help the wine age well, but have not had time to saturate and settle. In such cases, time on the shelf can usually alleviate the problem. Additionally, cheap red wines can fall victim to astringency if they are poorly made. In these instances, aging the wine will be of no avail.
